Dictionary of Nutritional Science has been compiled since 2002 with a fairly long compilation process and is finally published. The original intention of writing the book for us is in consideration of lacking a comprehensive nutrition science and reference book of common terms in our country. With the vigorous development of nutrition science research, teaching, academic exchange and science popularization of the masses in China, the use of nutriology vocabulary has become more and more frequent. There is a lack of unified definition and interpretation of the some core vocabulary of nutriology. There are some differences in the interpretation and use of the same word of professionals in different disciplines and different period so there is an urgent need to unify the understanding. A lot of related words in nutriology are distributed in the professional dictionary of relevant subject such as medicine, health, biology, biochemistry, pharmacy, agriculture and so on, which need to be organized collectively so as to extract related content of nutriology and facilitate the use of the majority of nutrition workers. Chinese Nutrition Science is the main source of terms in the dictionary with reference to many monographs on nutrition science in recent years. Terms and common terms of basic nutrition, population nutrition, disease nutrition, food nutrition, public nutrition and nutrition research methods and other aspects are widely collected to set the terms. The entry is written by the main editor of the relevant part of the book of Chinese Nutrition Science. All aspects of the entries are cross reviewed by the editor; the editor has carried out careful scrutiny for some difficult entries with hope to make it accurate. Compilation work of this dictionary is carried out in the organization and leadership of the Chinese Nutrition Society. The fifth, sixth and seventh council of Chinese Nutrition Society have all included Dictionary of Nutritional Science in the work plan and have given strong support and help from beginning to end so as to ensure the successful completion of the preparation work. Chinese Nutrition Society has appointed Jia Jianbin, Li Qing etc. to establish the "e;secretary group"e; so as to assist in the preparation work. In addition to coordinating the work of the secretary group, Jia Jianbin also undertakes the part of the entry of "e;fish"e; in the preparation work. A lot of specific help from Yang Yuexin, Yang Xiaoguang, He Yuna and other scholars is obtained in preparation process of Dictionary of Nutritional Science. Before publication, enthusiastic encouragement and recommendation of Chen Chunming, He Zhiqian, Chen Xiaoshu, Wang Longde and other Chinese nutrition experts are all obtained. Thanks a lot!
