Set within the wider backdrop of global-local tensions (Leitch, 2003), rising concerns around sustainability, growth in vegetarianism and veganism (The Economist, 2019), and a blossoming 'foodie' culture (Richards, 2015), it is arguably now more important than ever to understand how place and gastronomic development interrelate.
