Here we will be learning to cook using cuts from every part of the animal. This time we will be cooking with all of the cuts from a chicken and turning each and every one in to a delicious meal or starter. We will be learning the value of these cuts of meat and what they can give us in ways of flavor.
Any butcher in the land should be able to get and prepare these cuts for you, be they in a super market or from your local shop. Some of these cuts are not widely used so they remain cheap but the taste they can provide is astonishing. It's important to think about the provenance of the meat and the welfare of the animal as this directly impacts the flavor and quality of the meat.
This is not so much a recipe book but rather a guide to these cuts of meat and a way for you to explore different flavors. We will not be telling you an exact recipe but suggesting ingredients that go together well. This means that you can put your own stamp on to the dish once you are confident in the cooking of the meat. Everybody perceives flavors in their own unique way and it's only with using different combinations of ingredients that we can create our own perfect dish.
