Many of these cuts are not widely used so they remain cheap but the taste they can provide is astonishing. It's important to think about the provenance of the meat and the welfare of the animal as this directly impacts the flavour and quality of the meat.
This is not so much a recipe book but rather a guide to these cuts of meat. All of the ingredients listed are only suggestions so this means that put your own stamp on to the dish once you are confident in the cooking of the meat. Everybody perceives flavours in their own unique way and it's only with using different combinations of flavours that we can create our own perfect dish. If you don't like something…. leave it out, or you can simply replace it with something that you do like.
